Donut Cookies


#12 piping tip and 16" piping bag

Colored sprinkles of your choice

2 Mini donut baking pans


Ingredients for Cookie Dough

4 oz softened unsalted butter

1/4 cup white sugar

1/4 cup brown sugar

1/4 tsp salt

1 tsp vanilla extract

1/4 cup milk

3 beaten eggs

1/4 cup rice flour

1 tsp potato or corn starch

1 T coconut flour

1/2 tsp baking powder

1 1/4 cup all purpose flour


Preheat oven to 350F. Combine butter, sugars, salt, vanilla extract, milk and eggs. Mix with a hand mixer or a stand mixer until all ingredients are incorporated. Add the remaining dry ingredients one at a time leaving the flour as the last ingredient. 

Place the piping bag with tip attached into a large plastic cup to make it easier to add the dough to it. Pipe dough into the donut pans, filling each donut halfway. Bake for 15 minutes and cool on a rack when done. Make the frosting.


Buttercream Frosting

2 T softened unsalted butter

1 cup powdered sugar

1 T of milk

1/2 tsp vanilla extract

On the lowest speed, whip butter to soften and add 1/2 cup of powdered sugar and mix for a few seconds. Add a few drops of milk and mix again. Add the remaining sugar, continue to mix and add few drops of milk until the sugar has dissolved. The frosting should be thick. Add the vanilla and mix again. 

To frost your "donut", simply dip half of the donut into the frosting, swirling it back and forth, generously coating it. Sprinkle with your favorite colored sprinkles immediately before the frosting hardens.
